One of our storytellers, Gina Yap Lai Yoong, is crazy about Sabah’s coconut pudding for one simple reason: its ‘tau fu fah’ texture. Unlike puddings that use gelatin, the ones found in Sabah is made of young coconut juice and algae seaweed (agar-agar powder), which is the key to ensure its smoothness and softness.
Uniquely served in the coconut itself, coconut pudding can be found easily in Sabah. There are two variations: the regular Coconut Pudding and the ‘bakar’ Coconut Pudding – both are must-trys.
